Rooted in the rigor of scientific evidence and the richness of African food culture, our course empowers learners to understand the human body, the foods that nourish it, and how lifestyle guides lasting wellness.


Evidence-based foundations

The Global Wellness Institute’s Wellness Evidence platform provides a searchable repository of medical and scientific studies on wellness modalities — from nutrition counselling and chiropractic care to sleep, movement, stress management and more.
At KCS we draw on these categories to build a curriculum that is credible, modern and integrative — honouring both global research and local context.

  • Nutritional Counselling – integral to any programme of functional diet and food therapy.
  • Chiropractic – supporting our modules on posture, alignment, movement and body mechanics.

Programme structure & key modules

Our Food & Body Wellness Sciences track is structured to deliver immersive and applied learning across three inter-connected domains: Body Alignment & Movement, Functional Nutrition & Food Systems, and Lifestyle & Wellness Application at Kenya Coffee School

Module 1: Body Alignment & Movement

  • Anatomy & biomechanics of the spine and musculoskeletal system
  • Principles of posture, ergonomics and functional movement
  • Chiropractic and osteopathic health science concepts (drawing from the “Chiropractic” evidence base)
  • Applied labs: posture assessment, movement screening, corrective strategies

Module 2: Functional Nutrition & Food Systems

  • Fundamentals of macronutrients, micronutrients, metabolism and gut-brain axis
  • Nutritional counselling and diet planning (leveraging the “Nutritional Counselling” evidence category)
  • Gastronomic sciences: designing therapeutic meals and beverages (with emphasis on coffee, herbs, fermented foods)
  • Food systems: connecting Kenyan and African indigenous diets with global wellness nutrition

Module 3: Lifestyle & Wellness Application

  • Integrative lifestyle medicine: sleep, stress, movement, environment
  • Translating wellness evidence into actionable interventions (drawing from “Exercise”, “Sleep Health”, “Stress Management”)
  • Digital tracking, outreach and community wellness strategy
  • Capstone project: body+food wellness programme design for real clients or communities
