Boba Tea or Bubble Tea) is a sweet, cold Taiwanese drink made of brewed tea, milk, sweetener, and chewy tapioca pearls.

Here is how to make classic Brown Sugar Boba Milk Tea at home from scratch.

Ingredients

  • Tapioca Pearls (Boba): ½ cup quick-cook black tapioca pearls
  • Tea Base: 2–3 black tea bags (Assam or English Breakfast) or 2 tbsp loose-leaf black tea
  • Sweetener (Brown Sugar Syrup): ⅓ cup dark brown sugar (or Muscovado) + ⅓ cup water
  • Milk: 1 cup cold whole milk or barista-grade oat milk
  • Ice: 1 cup solid ice cubes
  1. Brew a High-Clarity Strong Tea Base
    Keep it concentrated so milk doesn’t dilute the tea note
    Steep 2–3 black tea bags in 1 cup of hot water (90°C–95°C) for 8–10 minutes. Remove the tea bags and let the concentrated liquid chill completely in the fridge.
  2. Cook the Brown Sugar Syrup
    Creates the distinct sticky sweetness for the pearls
    In a small saucepan, combine ⅓ cup brown sugar and ⅓ cup water over medium heat. Bring to a gentle simmer for 3–4 minutes until the sugar dissolves and slightly thickens into a glossy syrup. Remove from heat.
  3. Prepare the Tapioca Pearls
    Must be served fresh; never store cooked pearls in the fridge
    Bring 4 cups of water to a rolling boil. Add ½ cup of quick-cook tapioca pearls and stir gently until they float. Boil according to package instructions (typically 5–7 minutes). Drain the warm pearls and immediately transfer them into the warm brown sugar syrup to soak for 5 minutes.
  4. Assemble the Glass
    Coat the walls to create the signature marbling effect
    Spoon the warm, syrupy tapioca pearls into the bottom of a tall glass. Tilt the glass slightly and swirl the pearls so the brown sugar syrup coats the inside walls. Fill the glass to the brim with ice cubes.
  5. Layer and Serve
    Serve with a wide-gauge straw
    Pour ½ cup of the chilled concentrated black tea over the ice, followed by 1 cup of cold milk. Serve immediately with a wide straw.
